Big mixed veg & fruit #rainbowsalad… and, like most of my salads the past couple months, no dressing necessary b/c the mangos are so good! 1 lb of leafy greens (kale, lettuce, & beet tops), 1 lb cherry tomatoes, 1 lb ataulfo mangos, 1 medium zucchini, 1 medium beet, a few chopped beet stalks, a couple strawbs, handful of cilantro, kale blossoms, scallions, calendula petals, & a few squeezes of lime.
